Vegetable food with rice

The eggplant is washed, peeled and cut into cubes.

Pour over the vegetables and broth (or tomato juice), bring to the boil then add the eggplant cubes. Let it boil for another 10 minutes then add the rice. Homogenize everything and remove from the heat. Sprinkle chopped green parsley and celery leaves on top.

It is served hot and is perfect for a day of fasting!
